Ingredients:
- 3 Potatoes
- 700 ml of Chicken Stock
- 200g Red lentils
- 1 clove of Garlic (chopped)
- 1 onion (chopped)
- 2 carrots (sliced)
- Optional: Handful of chopped chorizo
1. Once all the vegetables are chopped (carrots, potatoes, garlic and onions) sweat them in a pan for about 5 minutes on a medium heat. |
2. Wash the lentils for about 5 minutes. Only do this if necessary check the pack beforehand to see what the recommend doing. |
3. Add the lentils and vegetable stock and bring the pan to the boil. |
4. Lower the heat, cover and simmer for about 35 minutes. |
5. Blend and serve. This soup is perfect for an occassion whether it's a tea time treat or a winter soup to enjoy at work in those colder months. Until next time C xxxxxxx |
